If you are looking for a smoky tomato soup, that happens to be whole food plant based, your tastebuds will absolutely enjoy this dish. I like to serve this soup with an avocado panini.
1 Tbsp. Olive Oil
1 Tbsp. Flour
1 (14.5 oz) can Fire Roasted Tomatoes
1/4 cup Water
1/2 Tbsp. Sugar
3/4 tsp. Salt
Dash Pepper
1/8 cup Oat Milk
Puree the fire roasted tomatoes and set aside.
Warm a medium sized pot over medium-low heat. Add the oil and sprinkle in the flour. Stir for one minute. Pour in the tomatoes, water, sugar, salt, and pepper.
Allow the soup to simmer on low for 30 minutes, stirring frequently.
Stir in the milk, and serve hot.
